White naturally sweet wine, Protected Designation of Origin Kefalonia from sun-dried Muscat grapes; Product of organic viticulture; Vintage 2005.
Historical data indicate that it was produced exclusively in the clay soil of Katogi since the Venetians, who considered it necessary to escort their meals. It was named after the stalactites adorning the caves of Kefalonia - places of worship of the Pan and the Nymphs - as each drop is as valuable, rare and crystal as the drops of a stalactite.

Vinification: We lay and dry in the sun the grapes of Cephalonian Muscat for about 10 to 15 days; after that, destemmed, pressing, alcoholic fermentation at a controlled temperature, filtering and bottling.
It has the color of noble old gold; fleshy body; essence of glazed apricot, with rich, sweet notes of spice. The honeyed finish is smooth and rich.
Absolute thesaurus itself; the ideal dessert wine; can also accompany perfectly ice-creams, roasted quince and apple, and seasonal sweet fruits. Served at 8-10˚ C.

FOIVOS WINERY
Phoebus Winery is the historical continuation of Mantzavino Winery, and is one of the oldest operating wineries in Greece. From 1999 onwards, Foivos S.A., the new proprietor of the estate, entered dynamically into the new era of the Winery, developing and taking advantage of the excellent local varieties, in conjunction with their maturity and the ideal climate of the island of Kefalonia. A special feature of the winery is the aging of wines under water by submerging bottles for aging at sea. At the same time, it implements another innovative method of aging and maturation by bottling bottles under fresh water, in special tanks of the winery.
