Dry white free-run wine; Protected Geographical Indication Slopes of Ainos, Kefalonia.
VARIETIES: Tsaousi
VINIFICATION: Cold extraction before fermentation for 8-10 hours at a controlled low temperature, separation of free run and press run musts, fermentation at a controlled temperature, maintenance of wine with the wine lees for about a month with periodical stirring, filtering and bottling.
ORGANOLEPTIC CHARACTERISTICS: Golden green color with greenish shades. Elegant aromas of white flesh fruits with delicate citrus notes. Fresh and fruity aftertaste.
FOOD PAIRING: Excellent as an aperitif. It accompanies perfectly white meats, seafood, fish, cheeses and fruits. Served at 8-10˚ C.

FOIVOS WINERY
Phoebus Winery is the historical continuation of Mantzavino Winery, and is one of the oldest operating wineries in Greece. From 1999 onwards, Foivos S.A., the new proprietor of the estate, entered dynamically into the new era of the Winery, developing and taking advantage of the excellent local varieties, in conjunction with their maturity and the ideal climate of the island of Kefalonia. A special feature of the winery is the aging of wines under water by submerging bottles for aging at sea. At the same time, it implements another innovative method of aging and maturation by bottling bottles under fresh water, in special tanks of the winery.
